Heat the fan / gas furnace to 200C/180C 6. In a big roasting tin, place the chicken. Remove any elastic trussing and, if you like, bind the feet of the chicken with a cord. Rub the lemon juice in the chicken, then sprinkle with the thyme and plenty of seasoning in 1 tbsp of oil. Roast 25 minutes.
In a pan, combine the squash, carrots, parnsips, and onion with the residual oil, lemon zest, and lots of ground black pepper, and throw well.
Remove the chicken from the oven and placed it on a tray. Scatter the vegetables into the tin, nestle underneath the garlic cloves, then stack the chicken.
