Heat over medium – high heat a big casserole and add the oil. Add the chicken and fry on all sides for 5 minutes or until well browned. Tip the vegetables and boil until you start to soften for another 5 minutes. Add the barley of garlic and pearl and take over 500ml of water. Cover and continue to cook for 25-30 minutes, sometimes stirring.
In the meantime, put all the dressing ingredients in a food processor’s small bowl and blitz until chopped very fine. Place in a tray and laid aside until served.
It is prepared to serve when the pearl barley is smooth, but still with a little snap, and most of the liquid is taken.
