Bourbon, black cherry & bacon brownies

Heat the fan / gas furnace to 180C/160C 4. In a small pan, the cherries in the bourbon are warm (do not boil), then leave for at least 20 minutes to infuse.

In the meantime, combine the cinnamon with the syrup of the maple and brush the bacon on both sides. Lay the rashers on a rack over a roasting tin covered with foil and roast for about 20 minutes until they look beautifully browned. Take them out and leave on the rack to cool whilst making the brownie mix.
